#SuperBowl weekend and we have all the recipes you'll need ?? #StayTuned #MoreToCome #WhatVegansEat ‘Cheesy’ Stuffed Jalapeño Poppers 1 cup vegan cream cheese @tofuttibrands 1/2 cup vegan cheese @daiyafoods 3 Tbsp. vegan bacon bits (try Bac~Os) 1/2 tsp. salt 1 tsp. garlic powder 10 fresh jalapeños, seeded, tops removed, and set aside 2 Tbsp. @followyourheart #VeganEgg + 1/2 cup ice-cold water (or 1 flax egg, see below) 2 cups panko bread crumbs Vegetable oil, for frying (optional) Place the VeganEgg mixture in a small bowl. Pour the bread crumbs into a shallow dish. Dip each jalapeño in the #VeganEgg mixture (or flax egg), coating thoroughly, then roll in the bread crumbs. For a crunchier popper, repeat these steps. To fry: Fill a frying pan with 1 inch of vegetable oil and heat to 350°F. Using tongs, carefully place several breaded jalapeños into the oil. Turn after 5 minutes and remove from the oil when golden brown. Allow to cool on paper towels for 5 minutes, then serve. To bake: Place the jalapeños on a greased cookie sheet and bake at 350°F for 15 to 20 minutes, turning once halfway through baking. Allow to cool for 5 minutes, then serve.

VEGAN TURKEY AND EGG CUPS✨ I can't believe I reached 2k! Y'all are amazing ? Here's a little something to say thank you! ? INGREDIENTS 2 tbsp @followyourheart #VeganEgg powder ¼ cup ice water ¼ cup aquafaba (liquid from a can of chickpeas / garbanzo beans) 1 tbsp soy milk or plain soy creamer splash apple cider vinegar 1 tbsp flour spoonful melted @earthbalance Buttery Spread desired spices (I used granulated garlic, onion powder, black pepper, and salt to taste) ¼ cup chopped green onions 6 slices Hickory Smoked Tofurky Deli Slices TOOLS whisk cooking spray muffin tin DIRECTIONS Set oven to 400 ℉. In small bowl combine soy milk and apple cider vinegar. Stir and set aside. (This acts as a substitute for Buttermilk.) In bowl combine VeganEgg powder, ice water, and aquafaba. Whisk until smooth. Add flour and whisk until smooth. Add Buttermilk mixture, Earth Balance, desired spices, and green onion. Whisk to fully incorporate. Spray six cavities of muffin tin with cooking spray. Gently press Tofurky slices into sprayed cavities. Spoon about 1 ½ tbsp of egg mixture into each turkey “cup”. Note: If using a 12 cavity muffin tin, pour a little water into remaining cavities. Bake for 15 minutes. Allow to cool for 1-2 minutes before handling. Garnish as desired and enjoy!

Vegan Cinnamon French Toast using @followyourheart's VeganEgg Apparently it was National French Toast Day on Saturday, and I actually made French toast that day without knowing it! But I forgot to post it here because I was really busy with college apps, but I'm done now! These French toasts are amazing. Crispy on the outside, soft, eggy, and sweetish on the inside. This recipe was actually derived from a non-vegan recipe, but I used a Vegan Egg to replace the egg and almond milk to replace heavy cream. Success! Recipe @starberryvie • 4-5 slices of French bread • 1 @followyourheart VeganEgg • 1/4 cup almond milk • 1/2 tsp cinnamon • 2 tbs maple syrup ?? Put the sliced French bread on a rack overnight. In the morning, blend the Veganegg together (1 packet + 1/2 cup ice cold water), then add in the rest of the ingredients and blend. Preheat oven to 375°F and a non-stick skillet on medium heat. Soak the bread in batter for 30 seconds on each side, then let it sit on a rack for a minute. Fry for 2 minutes on each side and bake for 5 minutes afterwards.
